One of the recipe questions I'm asked most often is, "How did you make the salad dressing?" Which my reply is always "3 to 1", let me explain. When making a simple vinaigrette, it is always 1 part vinegar to 3 parts oil. So if you use 1 tablespoon of vinegar, use 3 tablespoons of oil. You want to also use some mustard, I like dijon, to help hold it together. Below is one of my favorite Recipes for vinaigrette. ENJOY!

Maple-Cider Vinaigrette:
INGREDIENTS
1 teaspoon dijion mustard
1 teaspoon maple syrup
1 tablespoon apple cider vinegar
3 tablespoons avocado oil (or any neutral flavored oil)
kosher salt to taste
fresh ground black pepper to taste
METHOD
If using a stick blender or table top blender, place first four ingredients in container and blend till incorporated, don't over blend as this will cause vinaigrette to break. Finish by stirring in salt and pepper to taste. If mixing by hand, place first three ingredients in a bowl and whisk together with a whip. Slowly drizzle in oil while whisking till all is incorporated, stir in salt and pepper to taste.
